The Uses Of Lemon Balm...

I live in zone 5, in the United States.  Edible lemon balm can be grown here as a hardy perennial.  I love it!!!...

Some of the uses of it's fresh leaves:

Make a tea.  Put some in your gin & tonic.  Rub it on your hands after cleaning fish, or doing anything stinky.  Place a handful in your bath water.  Use it as a garnish, bake it on top of fish [especially salmon], or lamb.  Or, boil it in water, on the stove, as an air freshener.

Enjoy lemon balm!!!
